The first time I had sushi, I was not a fan. Whenever it was offered to me, I would hastily answer “No thank you, I do not like sushi”, and you could not miss the slight disgust on my face similar to that of a polite child who hates broccoli lol.
One day at a going away party, one of my husband’s friend drew my attention to the fact that there were different types of sushi (cooked and raw) and encouraged me to try her favorite ones. Oh my God!!! I was missing out! Although that day I only tried a few cooked ones, I was immediately hooked and remained under their spell. They were not just delicious and a delight to my taste buds, they were also a delight to my eyes. Finally, I found out that I only disliked to raw sushi. Since then, I have been a big fan of cooked sushi and have craved it countless time which led me to try it in my own kitchen with that Caribbean twist that you are sure to fall in love with.
Ingredients
- 2 cups of uncooked rice
- 2 cups of water
- 2 tablespoons of vinegar
- 2 tablespoons of sugar
- 1 1/2 teaspoons of salt
- 4 sheets of nori
- Strips of cucumber
- Strips of carrot
- Strips of bell pepper
- Slices of avocado
- 2 tablespoons of sesame seeds
- Sushi making kit bamboo (from amazon)
For the filling
- 1 cup of imitation crab meat
- 2 ounces of cream cheese
- Shrimp tempura
- 4 ounces of tuna (canned)
- 1/4 cup of minced onion
- Seasoning ( onion powder, hot sauce, etc.)
- 1 lime (for the juice)
Directions
I cooked the rice as I usually prepare my Haïtian white rice. In a pot on medium heat, add 2 teaspoons of oil and fry some green onion to a golden color then add the salt, the water and bring it to a boil. Rinse the rice and add it to the boiling water and let it cook until the water dries up. Reduce the heat to low and cover the pot until the rice is completely cooked. Once cooked, remove the pot from the heat and let it cool off, then transfer the rice to a medium bowl.
In a small bowl mix the vinegar and the sugar, then add the mixture to the rice. Add the mayonnaise and mix thoroughly until you have a soft a tasty rice.
You can use shrimp tempura or spicy tuna ( canned tuna mixed with mayonnaise, seasoning of your choice, minced onion and hot sauce) or crab meat ( crab meat mixed with cream cheese, mayonnaise, seasoning of your choice, lemon juice)
Wrap the rolling mat with plastic wrap, place it on a flat surface. Add one sheet of nori on top of the rolling mat and add 1/2 cup of rice and spread it across the mat to cover it completely ( I used the spoon included in the kit and my fingers lol). Alternatively, or if you so desire, you can add the rice first and then one sheet of nori.
Place the filing of your choice, the shrimp tempura or the spicy tuna or crab meat the strips of cucumber, bell pepper, carrot and the slices of avocado on top of the meat.
Pick up the side of the rolling mat closest to the meat and vegetables and start rolling while compressing the ingredients and tightly rolling up the sushi. That was the trickiest part for me lol.
Sprinkle sesame seeds on top of the sushi roll with the rice on the outside. Using a sharp knife, slice your sushi then serve with soy sauce.
